Fluffy Homemade Pancakes

Ingredients

  • 2 cups flour
  • 1.5 tbsp white sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup oil
  • 1 1/2 cup milk

Instructions

  • Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • ​Beat our eggs together in a small bowl.
  • Add the eggs, oil, and milk to the flour mixture.  
  • Mix it together with a whisk until the pancake batter is no longer lumpy but is nice and smooth.
  • Heat up a griddle or a large cast iron skillet pan to medium heat.  Add some oil to prevent sticking.
  • Add 1/3 cup of pancake batter to the griddle.
  • The pancake is ready to flip once the top has bubbles popping up and the sides are firming up and turning golden brown. It'll take around 2-3 minutes.
  • After you flip the pancake cook for another 2-3 minutes until golden brown on the other side. You can take a peak underneath if you need to.
  • Enjoy with some maple syrup, fresh fruit, and/or whipped cream.
