Pumpkin Waffles

Crisp, golden pumpkin-y waffles perfect for those chilly fall mornings.

Ingredients

  • 2 cups flour
  • 1 tbsp brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup butter melted
  • 1 cup pureed pumpkin
  • 1 1/2 cups milk

Instructions

  • Preheat the waffle maker.
  • In a large bowl mix the flour, brown sugar, baking powder, salt, ginger, nutmeg, and cinnamon together. Set aside.
  • In a medium sized bowl crack the eggs and whisk. Add the vanilla, milk, melted butter, and pumpkin. Mix together.
  • Add your wet ingredients into your dry ingredients and mix until well combined.
  • Grease your waffle maker. You can do this by spraying it with a non-stick cooking spray.
  • Take 1 cup of waffle batter and pour it into your waffle iron. You may need more or less batter depending on the size of your waffle maker.
  • Cook waffles until golden brown.
  • Serve with some maple syrup. You'll want to eat these waffles right away as the longer waffles sit on the counter the more likely they are to go soft.

Notes

  • Cook time may vary depending on your waffle maker.  You'll want to follow the instructions that came with your waffle maker for how long to cook these pumpkin waffles.
  • Top these waffles with milk chocolate chips, icing sugar, whipped cream, nuts, fruit, or whatever your heart desires!
