Preheat the waffle maker.
In a large bowl mix the flour, brown sugar, baking powder, salt, ginger, nutmeg, and cinnamon together. Set aside.
In a medium sized bowl crack the eggs and whisk. Add the vanilla, milk, melted butter, and pumpkin. Mix together.
Add your wet ingredients into your dry ingredients and mix until well combined.
Grease your waffle maker. You can do this by spraying it with a non-stick cooking spray.
Take 1 cup of waffle batter and pour it into your waffle iron. You may need more or less batter depending on the size of your waffle maker.
Cook waffles until golden brown.
Serve with some maple syrup. You'll want to eat these waffles right away as the longer waffles sit on the counter the more likely they are to go soft.
