Preheat oven to 350 F. Grease a muffin tin.
Chop up 1 cup of chocolate and set aside.
Combine flour, baking powder, baking soda, and salt in mixing bowl.
In separate bowl, mash the bananas with a potato masher.
Add egg, vanilla, yogurt, honey, and oil to the banana. Mix well.
Add wet ingredients to the dry ingredients. Stir just until fully combined. Do not overmix.
Add chocolate chunks. Fold into the batter gently, careful to not overmix.
Drop batter into muffin tin so it fills each cup 3/4 full.
Bake for 15-20 minutes, until golden brown and a knife poked into the muffins comes out clean.
