Banana Chocolate Chunk Muffins

Banana chocolate chunk muffins. Whoever invented the combination of banana and chocolate is a genius. Just sayin’. It’s right up there with chocolate and peanut butter.

We were celebrating Easter here not too long ago, and my children got quite the stash of chocolate from family members. Unfortunately, in this house, we don’t have the best self-control, so if it’s in the house, it’s a temptation. That’s fine for a few days, but after a few weeks it is time for it all to go. My kids actually had their fill and were ready to give some of their chocolate away. I decided using one of their chocolate Easter bunnies was a great way to add chocolate chunks to a muffin recipe. You could always use chocolate chips for this recipe as well.

Not only that, I made sure to recruit my kids to help me bake. Any homeschooling family knows this is a win. You get them to do most of the work, and you celebrate the fact that you had “Home Economics 101” today.

These muffins are nice and soft thanks to the yogurt and honey in them. Because nobody likes dry and crumbly muffins.

The first thing you want to do is chop up some chocolate. Poor little bunny.

My one regret on the muffins is that I chopped the chocolate too finely. Bigger chunks would have been tastier. Lesson learned.

Mix all the dry ingredients (flour, baking powder, baking soda, salt) and set aside.

Mash up the bananas with a potato masher.

Mix in your egg, vanilla, honey, yogurt, and oil.

Mix the wet ingredients into the dry ingredients. DON’T overmix. Just mix it together until completely combined.

Fold in the chocolate chunks. Again, don’t overmix.

Fill your greased muffin tin 3/4 of the way full. Two things here – 1. Notice how I greased on the top of the muffin tin too, not just in the cups. This prevents sticking if they are top heavy. 2. My muffin tin has clearly reached the end of it’s life. It’s in rough shape.

Cook for 15-20 minutes, until they start looking nice and golden around the edges and when you can poke a knife through it and the knife comes out clean.

Try to not eat them all at once. 🙂

Banana Chocolate Chunk Muffins

Ingredients
  

  • 2 cups flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 very ripe bananas
  • 1/2 cup honey
  • 1 egg
  • 1/4 cup oil
  • 1/2 cup plain yogurt
  • 1 tsp vanilla
  • 1 cup chopped chocolate chunks

Instructions
 

  • Preheat oven to 350 F.  Grease a muffin tin.
  • Chop up 1 cup of chocolate and set aside.
  • Combine flour, baking powder, baking soda, and salt in mixing bowl.  
  • In separate bowl, mash the bananas with a potato masher.
  • Add egg, vanilla, yogurt, honey, and oil to the banana.  Mix well.
  • Add wet ingredients to the dry ingredients.  Stir just until fully combined.  Do not overmix.
  • Add chocolate chunks.  Fold into the batter gently, careful to not overmix.
  • Drop batter into muffin tin so it fills each cup 3/4 full.
  • Bake for 15-20 minutes, until golden brown and a knife poked into the muffins comes out clean.
